Beautifully golden and sweet local plums... Summer is rapidly approaching! Here's a great recipe for all of the wonderful stone fruit that will be here before you know it! Click "Read More" for the details... Golden Plum JamThere is not much to this recipe. It is not even necessary to pit the plums before you start (you can remove them as the jam is cooking if you prefer). It's more of a process. What this means is that the amount of sugar you add to the jam is simply a matter of the quantity and sweetness of the fruit, and your personal taste. I started with 1 cup of sugar and just enough water to cover everything. I ultimately added 2 cups of sugar for this batch. Simply taste as you go. Remember, the jam set temperature is 220 degrees F. Be sure to check your thermometer more closely as you come within about 30 degrees of your jam set temperature. The temperature will rise more rapidly toward the end of the process. Enjoy! :) Let the simmering begin. Low and slow... Time to check the temperature... We're looking for 220 degrees... Add some freshly grated citrus zest for added zing!
