Savory Fried Zucchini

Just the other day, I was rummaging through my refrigerator and found a few zucchini squash that needed to be put to good use. I happened to be craving something salty and fried, so I decided to whip up some fried zucchini. This recipe is fast and easy. The hardest part is trying to avoid eating them all up as you cook them! I like to place the drained zucchini slices in a warm 200 degree oven until I'm done frying the whole batch!

Savory Fried Zucchini

2 or 3                fresh organic zucchini squash
2                        large eggs
1 cup                flour
​1/2 cup           *toasted bread crumbs
1/4 cup           Parmesan cheese
1 Tbsp             *corn starch
1 Tbsp             nutritional yeast *(optional)
2 tsp                dried herbs (basil, rosemary, thyme, etc..)
oil for frying
*Freshly ground black pepper and sea salt to taste

*Oil for frying

Directions
Clean and cut the zucchini into 1/2 inch thick slices.
Place all of the dry ingredients into a shallow baking dish and mix thouroughly.
Crack the two large eggs into a separate shallow dish, and whip them up completely.
Dip the zucchini slices into the eggs, then into the dry flour mixture.
Immediately fry them up in about 1 inch of quality hot oil for frying*
Allow the fried zucchini to drain onto paper towels and place them in a warm oven while you fry up the rest of the slices.

Serve with ketchup, mustard, or your favorite condiment. Enjoy! :)

*Notes
I like to use day-old bread to make my bread crumbs. Simply place a couple of slices in the toaster and pulverize them with a sturdy knife, blender, or food processor. 
I like to use non-gmo organic coconut oil for nearly all of my frying needs in the kitchen.
​The corn starch helps to keep the coating from getting too dark while frying.
Nutritional yeast is an amazing and healthy addition to many savory dishes. Its packed with essential b-vitamins and other vital nutrients. Nutritional yeast may sound a bit strange, but it adds an amazing umami kick!

    I have been baking breads, pies, cakes, and other treats ever since I was old enough to turn on the oven by myself. Although baking is my first love, I'm pretty good at the other stuff too! Over the years I have prepared everything from a pot of beans, to a whole roasted pig over an open fire!
